Salad days are not yet over—especially a nutrient-packed salad for the runner! Sköhns unveils their very own hearty salad recipe. High in nutrients, but low in calories and fat, this healthy option is good for any time of the day.
Fresh flavors and crunchy ingredients were thrown into a bowl, making it a tasty snack that could curb your hunger pangs and help you sidestep overeating during dinner.
Yield: 2 servings
Tear off chunks of both iceberg and romaine lettuce from the top of the heads. In a large bowl, combine lettuce and chopped veggies. Toss together with cherry tomatoes and croutons.
In a small bowl, whisk together all the dressing ingredients until well-blended. Add more lemon juice to taste. The lemon should give an edge to the dressing, but not overwhelm it. Taste, adjust seasonings and serve.
