Who can say ‘NO’ to cooked salmon? Salmon provides your body with a big dose of protein and vitamins B-6 & B-12—and pesto—not only is it delicious, it could also be your healthier-than-most-pasta dish, providing you a wealth of nutrients such as vitamins A and C, calcium and iron.

With Skohns’ recipe for a healthy, hunger-quenching Salmon Pesto, stop worrying about how much time you need to spend in the gym to burn off those calories. Sit back, relax and treat yourself to some pesto delight.

Ingredients:

  • 1 pc salmon fillet
  • 80gm spaghetti
  • 30gm pesto
  • 3 pcs cherry tomatoes
  • ¼ cup lemon juice
  • 100gm cooking cream
  • Salt
  • Sugar

Note: Lemon juice, cooking cream, salt, & sugar are for the lemon butter sauce.

Directions:

Cooking the Spaghetti

  1. Bring a large pot of water to a boil.
  2. Put in spaghetti when water is hot. Cook roughly for 9 minutes until spaghetti is cooked through but firm to the bite.
  3. Drain away the water and transfer spaghetti to a large bowl.
  4. Mix in the pesto sauce with the spaghetti and stir.

Cooking the Salmon

  1. Season the salmon with salt and pepper..
  2. Pour oil onto a large heated non-stick pan and heat over medium-high heat.
  3. Place the salmon onto the pan till middle is cooked—roughly 2-4 minutes a side is enough. Turn only once.
  4. Serve the salmon with the pasta and pesto.

PESTO SAUCE

Ingredients:

  • 1 cup fresh parsley
  • 2 cups fresh basil
  • ¼ cup pine nuts
  • ¼ cup grated parmesan cheese
  • 5 cloves garlic
  • ¼ cup olive oil
  • salt and black pepper to taste

Directions:

  1. Combine the basil, parsley, garlic and pine nuts in a food processor and pulse until coarsely chopped.
  2. Add ¼ cup of olive oil into the food processor and pulse until fully mixed and smooth.
  3. Season with salt and pepper.
